Ingredients:
3 cups of fresh spinach, chopped
15 large free-range eggs
3 cloves of garlic, minced
5 white mushrooms, sliced
1 small sized onion, finely chopped
1 ½ tsp. of baking powder
Ground black pepper to taste
1½ cups of coconut milk

Ghee, as required to grease the dish

Sea salt to taste

Method:

  1. Set the oven to 350°F.
  2. Get a baking dish then grease it with the organic ghee.
  3. Break all the eggs in a huge bowl then whisk well.
  4. Stir in coconut milk. Beat well
  5. While you are whisking the eggs, start adding the remaining ingredients in it.
  6. When all the ingredients are thoroughly blended, pour all of it into the prepared baking dish.
  7. Bake for at least 40 minutes, up to the quiche is set in the middle.
  8. Enjoy!
