Ingredients:
400g medium sized shrimp, heads and tails removed, cleaned
200g sweet Italian sausage, chopped
2 red bell peppers, chopped
2 yellow bell peppers, chopped
1 tsp. red chili powder
1 medium onion chopped
2 cloves garlic, skin removed, chopped small
2 tbsp. coconut oil
4 leaves of fresh mint, chopped

1 cup baby spinach
Salt
Pepper

Method:

  1. In a bowl, add salt over the shrimp and let it rest.
  2. In a pan, heat 1 tbsp. of the oil along with the garlic and onion. Fry until the onions are golden brown.
  3. Add the peppers along with the chili powder and salt. Fry on medium heat for 5 minutes or so.
  4. Remove from heat and cool. Transfer to a blender and add the mint leaves. Blend until a paste is formed. If the paste is too thick, add some oil to it. If it is still thick, add a little water.
  5. On the same pan, heat the remaining oil.
  6. Drain the water from the bowl of shrimp in the first step and season with pepper.
  7. Add the sausage and shrimp to the pan and also add the paste prepared in step 4. Add as much or as little as you want.
  8. Fry until the shrimp is cooked.
  9. Serve on a bed of baby spinach or a salad of your choice!
