Quick Shrimp Moqueca

Ingredients:
600g Shrimp Peeled and Clean
Salt to taste
Juice of 2 lemons
Braised olive oil
2 chopped purple onions
4 cloves garlic, minced
3 chopped tomatoes
1 chopped red pepper
1 chopped yellow pepper
1 cup tomato passata
200ml of coconut milk
2 finger peppers
2 tbsp. palm oil
Chopped cilantro to taste
Method:
- In a container, arrange shrimp, season with salt and lemon juice and set aside.
- In a hot pan, arrange olive oil and sauté onion and garlic.
- Add the chopped tomatoes and sauté well.
- Add the peppers and the tomato passata. Let it cook for a few minutes.
- Add coconut milk, mix well.
- Add the shrimp to the sauce.
- Finally, add the finger pepper, palm oil, and chopped coriander.
- Serve with rice and crumbs.
