4 150gm pieces of Trout fillets

2 avocado, diced
1/3 cup onion, diced
1 tbsp. lime juice
1 small jalapeno pepper, chopped
1 tbsp. cilantro, chopped
3 tsp. paprika
1 tsp. onion powder
1 tsp. garlic powder
1 tsp. cayenne pepper
1 tsp. dried thyme
1 small tomato chopped


  1. In a pan, heat the oil until warm over low heat.
  2. Season the trout fillets with salt and pepper and place skin side down over the oil.
  3. Cook on one side until golden brown to black and then flip to the other side until blackened.
  4. Set aside to cool.
  5. Mix ingredients 4-14 well together along with some salt and pepper.
  6. Spread over the trout fillets and serve the rest as a dipping sauce.
  7. Enjoy!
