1 pound of ground beef, cooked
10 eggs
½ cup Pico de Gallo
1 cup baby spinach
¼ cup sliced black olives
Freshly ground black pepper


  1. Preheat oven to 350 degrees Fahrenheit. Prepare a 9” glass pie plate with non-stick spray.
  2. Whisk the eggs until frothy. Season with salt and pepper.
  3. Layer the cooked ground beef, Pico de Gallo, and spinach in the pie plate.
  4. Slowly pour the eggs over the top.
  5. Top with black olives.
  6. Bake for at least 30 minutes, until firm in the middle.
  7. Slice into 5 pieces and serve.
