Beef Breakfast Casserole

Ingredients:
1 pound of ground beef, cooked
10 eggs
½ cup Pico de Gallo
1 cup baby spinach
¼ cup sliced black olives
Freshly ground black pepper
Method:
- Preheat oven to 350 degrees Fahrenheit. Prepare a 9” glass pie plate with non-stick spray.
- Whisk the eggs until frothy. Season with salt and pepper.
- Layer the cooked ground beef, Pico de Gallo, and spinach in the pie plate.
- Slowly pour the eggs over the top.
- Top with black olives.
- Bake for at least 30 minutes, until firm in the middle.
- Slice into 5 pieces and serve.
